  • Friday Food Festival (A Day Late)

    We have been slowly but steadily working our way through Rachael.

    Isaac did two more recipes this past week.  Two nights ago, he made RR#17: Honey Nut Chicken Strips.  We modified it slightly–it called for sugary cereal flakes to make the breading, and since sugar is from the devil, we substituted plain old Special K.  (It tasted just fine.)

    We also had oven fries and fried bananas.  When I realized, however, that everything we were making was “Variations on a theme of Beige,” I threw some frozen peas and carrots on the stove, just to add a little color.

    They look pretty sorry, sitting there next to the yummy bananas, crisp fries, and crunchy-tender chicken strips, don’t they?  That’s all right.  Everything tasted terrif.

    Then last night, he made RR#26: Florentine Meatballs.

    These were a surprise hit.  Well, it shouldn’t have been a surprise.  How could a recipe calling for three-quarters of a pound of cheese and portions of half a pound of meat per person be a problem?!

    But we didn’t notice that part when we read the recipe.  All we noticed was the 10 oz. of spinach and the ground chicken.  (Yuck-o!)  And Isaac particularly hated the part where he had to mix the meat mixture together with his hands.  He was not really open to the yummitude of the dish after that.

    But once it was in the oven, it started to give off a delightful smell.  And then we made the cheese sauce together and our corporate interest was revived.

    It was fabulous.  It called for two pounds of ground chicken to make twelve meatballs total, so they were these enormous balls (I wish I had gotten a picture!) that just sat there on your plate, covered in cheese sauce.

    We all looked at each other and said, “Are we allowed to eat that much meat?  Usually we only get two little balls.”  We could only finish 8 of the 12.

  • That looks delicious!  I sometimes put corn flakes in when I coat chicken, and the kids like it (but we like sugar pretty well around here, so if the recipe had called for frosted flakes I suppose we’d have used them).  I wouldn’t have thought of frying bananas, but gosh that looks good.  I may have to take a look at that cook book — yours is a very expensive blog to read!

  • She also has a pretzel coated chicken with cheesy mustard sauce recipe (I think it may be in another book) that is absolutely sinful.  The fried bananas look yumo!  Great job, Isaac.
